The volume name, partition GUID, or unique portion of devicepath can be used to tell Clover which entry is to be the default entry. See also DefaultLoader. Below are some examples of values that could be used:

Alternatively the default entry can be set in NVRAM using the Startup Disk preference panel and it will be given preference over the value given here.
DefaultLoader
<key>DefaultLoader</key>
<string>BOOTX64.efi</string>
In addition to DefaultVolume above, the path of the loader can be specified as DefaultLoader. This provides more precise default entry selection for Volumes that have multiple Loaders. The value can be the complete path or a unique portion like like file name.
